Pumpkin
Filled Cookies!

You need a lot of ingreditents to make these decadent (yet healthy) pumpkin cookies. But trust us they are SO worth it. We made them last night for our friends, and everyone loved them! Here is the recipe

What you need:

3/4 c. white whole-wheat flour
6 tbsp. plus 1 tsp. cocoa powder
Scant 1/4 tsp. salt
1/4 tsp. baking soda
1/4 c. plus 2 tbsp. sugar
2 tbsp. maple syrup or agave
2 tbsp. nondairy milk
1/2 tsp. pure vanilla extract
3 tbsp. plus 1 tsp. oil
3 tbsp. pureed pumpkin
3 tbsp. nut butter of choice
1/4 tsp. cinnamon
1/2 packet stevia (or 1/2 tbsp. sugar)
1/8 tsp. pure vanilla extract

What to do

  • Preheat oven to 330 degrees
  •  Combine first 5 ingredients (in the list above) mix well.
  • Add ingredients 6-9 mix again to form the dough
  • Combine the other ingredient separately to form the filling
  • Place a heaping ball of dough on a parchment lined cookie sheet and flatten in
  • Place a smaller scoop of filling in the middle and form the rest of the dough around the filling. Repeat till you’re out of room!
  • Bake 10 minutes, let stand 10 minutes
